Healthy Breakfast Tacos

What’s better than starting your morning with a nutritious, delicious breakfast to fuel your body for the day? Having tacos for breakfast! Yes, it is totally possible to make tacos a healthy, quick option for breakfast. Here’s how:

What You’ll Need:

  • 1 egg

  • ½ cup egg whites

  • 30g onion, chopped

  • 3 sweet mini peppers, chopped

  • ¼ tsp crushed red pepper

  • ¼ tsp chives

  • Salt & pepper to taste

  • ½ tsp olive oil

  • 1 whole wheat tortilla

  • ½ avocado

  • 2 tbsp. salsa

  • 1 tbsp (5g) reduced fat cheese, shredded

  • 1 tbsp fresh cilantro

How to Prepare:

  1. In a frying pan over medium heat, add the olive oil, chopped onions, and chopped peppers. Sauté for 3 minutes.

  2. In a bowl, add the egg and mix well.

  3. Add the egg whites to the bowl and mix well.

  4. Stir in the crushed red pepper, chives, salt, and pepper.

  5. Pour the egg mixture into the frying pan, scrambling until cooked all the way through.

  6. Fill a tortilla with as much as the egg mixture as desired. I put about half on the tortilla and half in a separate bowl, as to not overfill the taco.

  7. Garnish with cheese, avocado, salsa, and cilantro.

*Macronutrients and calories will differ slightly depending on brands of ingredients used. When buying tortillas, I recommend getting 100% whole wheat ones that have at least 10g of fiber in a single serving.
